The origin of this famous recipe is unknown. Codfish is usually present in Portuguese holidays and Codfish Gratin is particularly associated with New Year.
Since the 19th century – when potatoes became consumed all through Portugal –, codfish and potatoes have been put together in many Portuguese recipes.
There are many oven-baked dishes where codfish is gratinated being ‘Codfish Gratin’ one of the simpler and most famous recipes.
Previously soak the codfish, then remove all skin and bones, and shred it in tiny pieces. At the same time, boil the unpeeled potatoes in salt water. When they are done, peel and slice the potatoes. Boil three eggs.
Melt butter into a pot and add wheat flour pouring hot milk slowly as you stir until you have a thick cream. Add two whipped yolks to some milk and heat it. Place alternate layers of potatoes, shredded codfish, boiled eggs, and cream on a baking tray. Cover it with the remaining cream. Finally, squeeze some lemon juice and sprinkle black pepper and grated cheese. Put it in the oven.
