Restaurant Margarida da Praça, Viana do Castelo

History

Viana do Castelo’s famous restaurant was inaugurated in the 1960s. Owner and chef Margarida came up with this dish, which ended up taking the name of its creator.

Ingredients
Large codfish loin
3 large onions
1 clove of garlic
5dl (0.8pt) of olive oil
1.2kg (2lbs) of potatoes
Pepper to taste
Confection

Roast a soaked codfish fillet. Then quickly boil the codfish in a pot of hot water. Sauté very thin slices of onion, chopped garlic, and olive oil. Slice boiled potatoes and place them at the bottom of the plate. Place the roasted codfish on top and cover it with the onions.
