This recipe originates from the restaurant ‘Zé da Calçada’, in Amarante.
One of the most famous houses in Amarante with its history dating back to the 19th century, the Zé da Calçada restaurant is characterised for being located in the historical part of the city, the balcony over river Tâmega, sophisticated service, and most of all its gastronomy.
Dip the codfish loins in flour and fry them in olive oil. Then fry an onion with garlic, pepper, salt, and bay leaf. Place the fried codfish in a casserole and the fried onion mixture on top. Then add a layer of mayonnaise. Finally, cover it all with a layer of mashed potatoes. Roast it for ten minutes. Remove and decorate with red pepper. Serve hot.
