This recipe was created by a simple woman called Maria de Jesus Mourão, who lived in Valpaços in the 19th and 20th centuries and died in 1910. This woman had mental issues having been held in an institution against her will and considered to be a witch with delightful cooking skills.

History

There are other variations of this recipe like the Valpaços Witch Rabbit. It is relatively near Vilar de Perdizes, where a fair dedicated to the occult takes place every year.

Ingredients
1/2kg (1lb) of shredded codfish
1/2kg (1lb) of sliced potatoes in thin slices
450g (15oz) of sliced onion
150g (5oz) of chopped black pork bacon
2dl (0.3pt) of extra virgin olive oil
1.5dl (0.2pt) of white wine vinegar
5 sliced cloves of garlic
1 bay leaf
3 tbsp of chopped parsley
3 tbsp of wheat flour
3 tbsp of wheat flour
Ground pepper to taste
Confection

Pass the codfish through several water changes to remove excess of salt. Place the onion, garlic, codfish, flour, bacon, and bay leaf in a clay cooking pot. Repeat this procedure three times. Season with salt, pepper, vinegar, and olive oil and leave it to simmer. After it begins to boil, let it cook for 15 minutes shaking the pot to stop it from burning. Before serving, add some scent with chopped parsley.
